Apple Crisp


Ingredients:

Base:

1 roasted chayote

2 tsp lemon juice

½ tsp vanilla

½ tsp cinnamon

3 tbsp sugar free maple syrup

Topping:

1 packet of apple oatmeal

¼ tsp baking powder

½ tsp of cinnamon

2 tsp of grape seed oil

1 tbsp maple syrup

¼ tsp of salt

Method:

Preheat oven to 400 F, wash and dry whole chayote – do not peel! Place chayote in small baking dish and roast for 1 hour. Remove from oven and cool.

Once cooled slice into pieces mimicking apple slices 1/8-inch-thick and 1 inch long. Spray small baking dish with nonstick spray.

In a small bowl place your sliced chayote, lemon juice, vanilla, cinnamon and maple syrup and toss well. Pour into the bottom of the baking dish.

In another small bowl add oatmeal, baking powder, salt, cinnamon, oil and maple syrup. Using your fingers mix all ingredients together working in the oil and syrup to make a nice crumble topping.

Sprinkle evenly over top of chayote mixture in baking dish.

Preheat Oven to 375

Cover and bake for 30 minutes, remove cover and bake for an additional 5-10 minutes.

You may enjoy with additional sugar free syrup, your milk allowance, or a splash of a vanilla drink.

Tip: Choose products like Walden Farms sugar free maple syrup as ¼ of a cup is a serving. You want to make sure you are tracking sweetener intake.
