1-2 chicken carcass with leftover meat on it if possible 4 whole celery stalks 4-6 whole green onions 2-4 fresh stings of Thyme 2-4 fresh springs of oregano 1-2 whole garlic cloves sliced Salt 1 tsp Fresh peppercorns 1 tsp 1-2 whole bay leaves 1 tbsp Apple Cider Vinegar 12 cups of water or more to cover if using more than 1 chicken carcass
Bring all ingredients to a boil, reduce to a simmer - simmer for 24-48 hours. Remove from heat and strain. Use as chicken soup. You can use all of the leftover chicken from the carcass and season to taste. Store in fridge for 3-4 days or up to a year in a freezer safe container.
