Chicken Fried Cauliflower Rice


Ingredients:

2 tsp olive oil

2 tbsp Braggs Soy Aminos

1 garlic clove fine minced

¼ tsp ground ginger

1 large egg

6.5 ounces cooked chicken diced

1 ¼ cup riced cauliflower

¼ cup diced green onion

¼ cup fine diced celery

¼ cup fine diced green pepper

½ tsp fresh ground pepper

¼ tsp salt


Method:

In a skillet over medium heat add oil and garlic and stir-fry garlic. Add in leftover chicken, celery, green pepper and green onions. Sprinkle over ginger, salt and pepper stirring while veggies become tender and chicken is heating through. Clear a corner of the pan and crack in the egg and scramble fry breaking into pieces. Mix eggs through chicken and vegetables, now add in riced cauliflower and Braggs Soy Aminos.

Cook until cauliflower is tender. Plate and serve immediately.

Recipe yields: 8oz of protein, 2 cups of vegetables, 2 tsp of oil

Tips: You can use Konjac rice in place of cauliflower rice or a mixture of the two.
