Pumpkin Pie


Crust Ingredients:

1 pkg of vanilla drink mix

1/8 tsp of baking soda

1/4 tsp of baking powder

1 tsp of sugar free granular sweetener 

1 egg yolk

2 tsp of grape seed oil

1 tbsp of milk or unsweetened almond milk

Crust Method:

Mix dry ingredients together in one bowl and wet ingredients together in a separate bowl. Combine the dry and wet ingredients together. You will need to work with a silicone spatula and keep folding the ingredients until they are combined. Work into a ball and wrap tight in parchment paper. Place in fridge for 30 minutes to an hour. Roll out thin in between 2 pieces of parchment paper. Place in a 6 inch pie plate.


Pumpkin Pie Ingredients:

1 beaten egg

¼ cup sugar free maple syrup

1 tsp pumpkin pie spice

1 tsp of melted sugar free orange marmalade (optional but good)

½ cup of rutabaga puree

1 packet vanilla drink mix powder or pumpkin spice latte mix

Pumpkin Pie Method:

Beat together all ingredients until smooth, then pour into pie crust.

Bake at 325 degrees for 45 min. Let cool completely and drizzle with a little sugar free maple syrup. Pie filling is delicious baked on its own if you prefer a crustless version.
