3/4 cup of rhubarb sliced fine on the diagonal
1 tbsp fresh lemon of lime juice
1 tbsp maple Syrup
1 tbsp WF Jam
1 tsp of fresh orange zest
1 tbsp water
Place rhubarb in a small shallow dish, whisk together, citrus juice, maple syrup, water, and orange zest.
Cover and set aside for at least 2 hours if you can.
1 packet apple oatmeal
¼ tsp baking powder
¼ cup fine diced rhubarb
½ beaten egg
¼ tsp orange zest
¼ tsp cinnamon
1 tbsp maple syrup
In a small bowl mix oatmeal, cinnamon, and baking powder together.
In another small bowl add rhubarb, egg, orange zest, and maple syrup. Mix well.
Combine wet into dry and mix well.
Pour into small baking dish 2x4 or 4x4 spread even.
Preheat oven to 350 degrees.
While oven preheats, strain rhubarb from glaze. Set aside glaze.
When oven is ready bake oatmeal for 5 minutes, remove from oven and spread even the ¾ cup of rhubarb over top of oatmeal. Bake for 15 more minutes.
While square bakes, in a small saucepan, heat the glaze until bubbles. Remove from heat and set aside to cool.
Remove the square from oven and let cool.
Once glaze and square are cooled, pour glaze over the square.
Recipe yields 1 cup of vegetable, 1 unrestricted packet, 1.5 serving of sweetener, and .75 of an ounce of protein.
