Roasted Turnips and Green Beans


Ingredients:

1 cup peeled and diced turnips

1 cup green beans trimmed

Dressing:

2 tsp olive oil

1 tsp Dijon mustard

1 tbsp lemon juice

½ tsp salt

½ tsp pepper

½ tsp caraway seeds

1 tbsp water

Method:

Line a baking sheet with parchment paper or silicone slip mat, preheat oven 375 F.

Whisk together all dressing ingredients and divide in half. Toss the turnips in half of the dressing and place the turnips on baking sheet and roast for 20 minutes.

While the turnips roast, toss the green beans in the remaining dressing, add the green beans to the turnips on the roasting pan and roast for an additional 20 minutes.

Serve hot.

Recipe yields 2 cups of vegetables, and 2 tsp of oil.
